Quick & easy recipes are great when you want to cook up a meal and you are short on time.

Quick & Easy Chicken Pie Recipe

3 cups cooked, diced chicken
1 ( 10 oz. ) pkg. frozen mixed vegetables
1 ( 10 3/4 oz. ) can Cream of Chicken Soup
1 c. chicken broth
1/4 tsp. pepper
1 c. Bisquick
3/4 c. milk
1/4 c. margarine, melted

Preheat oven to 400 degrees. In 2 quart shallow baking dish, spread chicken and vegetables. Stir together soup, broth, and pepper in a small mixing bowl. Pour over chicken mixture. Combine Bisquick, milk and butter in seperate bowl; stir until smooth. Pour this mixture over other ingredients in baking dish. Bake for 45 -50 minutes or until golden brown. Serves 4 - 6.

Extra Cheesy Macaroni

Use 1/2 cup milk instead of 1/4 cup
Velveeta cheese slices

This is a simple and easy recipe but makes a extra cheesy macaroni, Follow the directions on the box but double the milk. This is going to go in the oven so extra milk is needed.

In a glass baking dish, spread the macaroni and cheese. Now simply place velveeta cheese slices over the macaroni. Pre-heat the oven to 350 degrees. This only needs to bake about 15 minutes.

Quick Clam Chowder

2 ea Potato; pared and diced
1 c Leek; washed and sliced or
1/2 c Celery; sliced
1/2 c Carrot; sliced
2 ts Margarine; diet
2 c Tomato; low sodium - canned
1/4 ts Thyme
1 ea Littleneck clams; rinsed

In 4 qt microwave casserole, combine potato, leeks or onions, celery,carrot, and margarine;cover with plastic wrap and zap on high for 6 min, until potato is softened.

Add tomatoes with liquid and thyme,recover with plastic wrap and zap again on high for 5 min until potato is soft and mixture is thoroughly heated.

Arrange clams hinge side out and cover again...Zap 3 min turn... Zap 3 min.Let stand 5 min and serve.

Quick & Easy Potato Soup Recipe

4 1/2 cups diced potatoes
1 tablespoon margarine
3 tablespoons flour
1 quart whole milk
1 teaspoon onion powder

1. Place onions and potatoes in sauce pan. Coverwith water and bring to boil. Simmer until soft,about 10 minutes, then drain.

2. Melt the margarine in a saucepan. Add flour and stiruntil smooth. Heat to thicken.

3. Add the onion powder and potatoes to the milk mixture, andheat to serving temperature.
