Chicken Recipes You Will Love

Delicious Chicken recipes that are simple and cheap.

Chicken recipes are always one of the most sought after recipes I have. The reason is simple --- chicken can be added to recipes in so many ways that you never run out of ways to use it.

Not to mention chicken is not expensive.

Chicken Salad

One of the things I like most when cooking chicken is gravy. But it's not always possible to get enough juices from the chicken to make it.

Not to worry. Here is a chicken gravy recipe I make all the time.

1 tablespoon vegetable oil
5 tablespoons all-purpose flour
1 can Campbell's chicken broth plus 1 can of water
1/4 teaspoon salt
1/8 teaspoon ground black pepper
About a tablespoon of chicken boullion.

  1. First make a roux by combining the oil with 1 1/2 tablespoons of flourin a medium saucepan over low heat. Heat the mixture for a few minutes, stirring often, until it is a dark color. Many recipes say to cook this for about 20 minutes but I have never had the patience and it works for me.

  2. Remove the roux from the heat, stir in the rest of the flour, and add theremaining ingredients to the saucepan; mix well.

  3. Put the saucepan back over the heat, turn it up to medium and bring thegravy to a boil. Reduce heat and simmer for 15 minutes, or until thick.
This is delicious and when my chicken recipes call for mashed potatoes, I'm good to go.

Diabetic Corner

My wife was a diabetic for over 40 years until she received a pancreas transplant recently. Healthy food has always been something we strived for and, of course, our menu had to be planned around her needs.
